Vegan sugar cookie :)

Strangely enough, despite the great popularity it has in America, it isn’t pretty unknown in the UK. A lot of my friends and family from UK have not even heard about it! It’s crazy! Felt like we were living in an alternate reality despite seeing it in American movies.

Anyways, in the spirit of Christmas, I’ve decided to make some sugar cookies.

Ingredients:

  • Vegan butter (1/2 cup)
  • Granulated sugar (1/2 cup)
  • Vanilla extract (1 tsp)
  • Almond extract (1/2 tsp)
  • Baking soda (1 tsp)
  • Salt (1/2 tsp)
  • All purpose flour (2 cups)
  • Icing with food colouring

Instruction:

  1. Mix vegan butter and granulated sugar in a mixing bowl
  2. Add vanilla extract and almond extract and stir together
  3. Mix the flours: All purpose flour, baking soda & salt.
  4. Mix it all together until it form into a cookie dough
  5. Put the dough in the refrigerator for at least 30min
  6. Roll the dough (NB: use flour to prevent it from sticking)
  7. Use cookie cutter
  8. Bake the cookies: 400 degree Fahrenheit for 15-18min. Shorter time for more softer and longer for more crunchy.
  9. Decorate with coloured icing sugar
