Lentil soup
Step 1: Cook onions/garlic until caramelized
- Olive oil
- Onion – diced (1)
Step 2: Add lentils, vegetables, water, and seasoning – cook with lid on low-medium heat for 25-45min until soften
Add lentil & vegetables:
- Red/green/brown lentils – rinsed (x3 cups)
- Carrots – medium size & diced (x2)
- Celery – diced (x2 ribs)
- Potato (x1 large or x2 medium)
- Tomato – diced (x2)
Seasoning:
- Salt
- Pepper
- Vegetable stocks
- Garlic clove (2) – optional
- Ground cumin (1 + 1/2 tsp) – optional
- Ground coriander (1 tsp) – optional
- Paprika – optional
- Oregano – optional
- Hot pepper – optional
- 2 bay leaves
Add water
- Add 9 cups of water (or vegetable stocks)
Step 3: Remove bay leaves and add baby spinach – cook a further few min
- Remove bay leaves
- Add baby spinach
Step 4: Blend it
- Blend it with a hand blender (or blend half of it in a blending machine) – optional
Step 5: Add garnish/condiment
- A common garnish is parsley (can also add other herbs such as thyme and coriander)
- Flake chilli – optional
- Squeeze lemon
