Lentil soup

 

Step 1: Cook onions/garlic until caramelized 

  • Olive oil
  • Onion – diced (1)

Step 2: Add lentils, vegetables, water, and seasoning – cook with lid on low-medium heat for 25-45min until soften 

Add lentil & vegetables:

  • Red/green/brown lentils – rinsed (x3 cups)
  • Carrots – medium size & diced (x2)
  • Celery – diced (x2 ribs)
  • Potato (x1 large or x2 medium)
  • Tomato – diced (x2)

Seasoning:

  • Salt
  • Pepper
  • Vegetable stocks
  • Garlic clove (2) – optional
  • Ground cumin (1 + 1/2 tsp) – optional
  • Ground coriander (1 tsp) – optional
  • Paprika – optional
  • Oregano – optional
  • Hot pepper – optional
  • 2 bay leaves

Add water

  • Add 9 cups of water (or vegetable stocks)

Step 3: Remove bay leaves and add baby spinach – cook a further few min 

  • Remove bay leaves
  • Add baby spinach

Step 4: Blend it

  • Blend it with a hand blender (or blend half of it in a blending machine) – optional

Step 5: Add garnish/condiment 

  • A common garnish is parsley (can also add other herbs such as thyme and coriander)
  • Flake chilli – optional
  • Squeeze lemon
