Greek pea tomato stew (Arakas)
Although it is called pea stew, there are also usually other vegetables including carrots and potatoes. It is regarded as a peasant food but is a popular dish in most greek households.
Step 1: Heat for a few minutes until it becomes aromatic
- Onions – chopped (1-2)
- Cloves of garlic – chopped (2) – optional
Step 2: Add vegetables and olive oil – cook at high heat for 6-7min
- Peas (500g)
- Potatoes – cut in small chunks (2-3)
- Carrots – small (2-3)
- Olive oil (4 tbsp)
Step 3: Add seasoning, tomato paste/puree, and water (to cover) – cook with lid at medium heat for 30min
- Tomato paste (4 tbsp)
- Tomato puree can (300ml or half a can)
- Water – cover all vegetables
- Vegetable stocks (1)
- Salt (1/2 ts)
- Pepper (…)
- Oregano (1 pinch) – optional
- Spearmint (1 pinch) – optional
- Barchar seed (5-6) – optional
Step 4: Add dill – cook without lid at medium heat for another 15min
- Chopped dills (1 tbsp)
