Greek pea tomato stew (Arakas)

Although it is called pea stew, there are also usually other vegetables including carrots and potatoes. It is regarded as a peasant food but is a popular dish in most greek households.

Step 1: Heat for a few minutes until it becomes aromatic

  • Onions – chopped (1-2)
  • Cloves of garlic – chopped (2) – optional

Step 2: Add vegetables and olive oil – cook at high heat for 6-7min

  • Peas (500g)
  • Potatoes – cut in small chunks (2-3)
  • Carrots – small (2-3)
  • Olive oil (4 tbsp)

Step 3: Add seasoning, tomato paste/puree, and water (to cover) – cook with lid at medium heat for 30min

  • Tomato paste (4 tbsp)
  • Tomato puree can (300ml or half a can)
  • Water – cover all vegetables
  • Vegetable stocks (1)
  • Salt (1/2 ts)
  • Pepper (…)
  • Oregano (1 pinch) – optional
  • Spearmint (1 pinch) – optional
  • Barchar seed (5-6) – optional

Step 4: Add dill – cook without lid at medium heat for another 15min

  • Chopped dills (1 tbsp)
