Kitsune Udon
Servings: 2-3 servings
Ingredients:
Noodle:
• Udon (2 packs)
Dashi Broth:
• Kombu (5cm x 12cm Kombu or Kombu powder)
• Water (600-750ml)
• 6 Shiitake or Mushroom powder (1/2-1 tsp)
• Soy Sauce (1-2 tsp)
• Salt (1/2 tsp)
• Granulated sugar (1tsp)
• Mirin (1 tbsp)
Topping:
• Scallion/Green onion (1)
• Chopped Inari age
• Fish cake substitute (…)
• Fried tempura crumbles (…)
• Boil Sansai vegetables, Spinach or Kale
• Thin slice seaweed (nori)
• Wakamae seaweed
• Mushroom (Shimeji)
Cooking method:
1. Prepare the udon noodles
2. Prepare soup base:
• Kombu (5cm x 12cm Kombu or Kombu powder)
• Water (600-750ml)
• 6 Shiitake or Mushroom powder (1/2-1 tsp)
• Soy Sauce (1-2 tsp)
• Salt (1/2 tsp)
• Granulated sugar (1tsp)
• Mirin (1 tbsp)
3. Prepare the toppings:
• Chop diagonally Scallion/Green onion
• Chopped Inari age into thin slices
• Fried tempura crumbles (…)
• Boil Sansai vegetables, Spinach or Kale
• Seaweed (Thin slice nori or Wakamae seaweed)
• Boiled Mushroom (Shimeji)
